A great tasting sample can lose character once it meets real production conditions. Temperature, pH, carbonation, and packaging all influence how a flavor performs over time.
Protect aroma during thermal processing
If your process includes pasteurization or hot-fill steps, choose flavor systems designed for heat stability and validate dosage after processing — not only in cold lab mixes.
- Confirm target pH and Brix with your flavor partner early.
- Run pilot trials under the same heat profile as production.
- Evaluate aroma after 24–72 hours and again after accelerated storage.
Storage and packaging matter
Light, oxygen, and elevated warehouse temperatures can flatten citrus and berry notes. Opaque packaging and consistent cold-chain practices help preserve the profile consumers expect.
